It’s a marriage made in heaven, coffee and pie.

The classic American dinner always has a waitress asking "can I top you off?" as she pours more hot coffee. There are pies and donuts behind glass and people linger in the booth or at the counter enjoying coffee with everything from a hamburger to my personal favourite a big slice of pie. Warm coffee and a warm piece of pie that towers high on the plate, maybe even a la mode . . .  just heaven. 

So as Thanksgiving approaches we need to get our pie making techniques up to scratch. The American pumpkin pie, cinnamon and nutmeg and spice is the intro to Fall. Pumpkin spice is everywhere.
